These Pacific Oysters were wild-farmed in the tidal waters of harbours throughout Northland, the Hauraki Gulf and Marlborough Sounds, so are – happily for us – available all year around.
They are plump, deep-cupped oysters with a clean taste that is fresh and crisp, with a sweet creamy finish that’s all the better for a squeeze of lemon.
